are the highlight areas also darker than you had in mind? if your subject is going to be in the shade, you can pre-meter on a shaded spot (can be your own shadow, generally) and set the camera manually so the bright spots can't fool it.... but those bright spots are going to be very light in the resulting picture. the film's exposure latitude can only handle so much.

are you shooting slides or prints? if slides, exposure latitude is limited and trying to get full sun and shadows both well defined on a shot will be pretty tough. if prints, you might look into having your existing negatives reprinted lighter.... often the film has recorded the detail you want but the printing machine doesn't understand your intentions. if you have negatives, check them and see if some show detail in the shaded areas.
